I think it depends how much you like research. If you like research a lot, History of Imperial China. We take a trip to the Chinese archives and several museums to help write the term papers.
If you like getting out and doing stuff, I do field exercises in Introduction to Strategy and Tactics. I might also teach Introduction to Naval Warfare and let the students build not-to-scale ships with water cannons, then fight with them, next term.
