Shitposting is a little hard to really describe since what exactly it means is just a little different for everyone, but personally I'd say if you search back through the network's history a bit, a lot of the stuff you see posted under the username '46692' feels like it.
Other people will probably have their own answers, but to me it's something that's deliberately stupid, or weird, or just doesn't make any sense considering where it was posted.
A "meme" is kind of a thing that gets passed around a bunch of people and altered to convey some kind of meaning or feeling. It's kind of an emotional meaning rather than an objective one. Usually humor, but not always.
And a "shitpost" is a low-effort post that's often a meme itself, usually meant to troll people.
...I never had to actually explain this before to anyone and it took like twenty minutes to figure out how I even could.
As has been stated, the former is a concept that spreads across a group, society, or subculture, often a joke or joke format. Computer people know the answer.
The latter is a ridiculous statement made for humour and/or irritation. I think so, anyway. The word is much newer in comparison. I asked someone who had been displaced from time in a sense and was met with the response, "So like nightblogging?" I know not, though, as it is not exclusive to night.

I will keep an eye out for more of these shitposts.

No, it's more of... make fun of or to provoke a negative response from someone for their own amusement.
You know. Being a jerk.
There's no eating involved, despite bringing up trolls. Don't ask me where the phrase comes from, I don't actually know.

Does this trolling happen often, here?

I haven't run into too many times where it was meant with actual malicious intent here. But that's not to say it doesn't ever happen, either.
The nuance is kinda hard to figure out without experience and knowing the people involved.

I see.
I suppose I will have to see it for myself.
